Fall cooking has just begun

Er, I guess it started back with all those squash. Ok, I'll try again.

Fall cooking is in full swing.

Better.

Here are our annual spiced pumpkin roll-out cookies with orange (flavored and colored) glaze. I would like to mention that it is extremely hard to find a roll-out cookie that utilizes pumpkin and that the one I found was terrible so I've modified it. Or changed half of the recipe. You could also say that. In any case, they didn't taste as good to me this year as in years past and I've decided to blame that on the pregnancy tastebuds. My friends still said they were delicious and the kids still really like them. 








This is the BEST chili I have ever made. (I wont mention I just started making chili in July and have only done it maybe 4 times.) Yes, it is fantastic. Kidney, Pinto, and Black beans. Red bell peppers, red jalepenos, ground beef. Lots of tomatoes. Just one onion because I only had one on hand. Salt, pepper, cayenne pepper, paprika, coriander seed (I don't know what this is for but another recipe called for it so I figured it belonged in chili) and I think that is it, actually. 

AND, because I am awesome like that, I used DRY beans and actually soaked them myself. That is like the hardest part. It was so good that I decided to enter a chili cook off contest in one week.  The one problem, of course, is that nothing was measured, not even the beans, so I hope it tastes as fabulous on the 27th as I remember now.

And if not, we will have a lot of chili to eat up.
